Gluten FREE, Low Carb Korean Spicy Noodles (Bibim Guksu)
Classic Korean summer noodle dish with a low-carb twist.
Now that is summer and SO HOT, all I crave it refreshing foods. A bowl of spicy Korean cold noodles is what I need! We actually found a pack of shiritaki bibim guksu at Hmart (korean grocery store) near our home. It's honestly one of the first times I've seen a low carb alternative to prepackaged Korean noodles in the US. I just had to buy it to try, but it also SO expensive ($7) for 1 bag. Since most of the time bibim guksu is NOT gluten-free this was an interesting alternative. The flavors were refreshing, spicy, sour, salty, sweet - all of the above! I loved how quick it was to put together and just satisfied my Korean food cravings! Given how expensive it was, I thought I really need to make this home. Come to find that after googling, that it really is relatively simple. The key to this recipe is the sauce - Korean chili pepper paste, kimchi, sugar, vinegar and toppings! The great thing about this sauce is you can taste and adjust to your liking. While not necessarily included below, I would say a drizzle of sesame oil will make this taste EVEN more fragrant!
Please do use your favorite noodles here. I have found that NOT all shiritaki (low carb) noodle brands are made equal - some taste great, others have a weird texture. So please do use the type that you enjoy!

Gluten FREE, Low Carb Simple Korean Spicy Noodles (Bibim Guksu)

Ingredients
2 bags of noodles - we used shirataki noodles
Sauce:
3 tbsp OUR Gluten-Free Gochujang
1 tbsp low sodium soy sauce
2 tbsp apple cider vinegar
2 tbsp sugar
2 cloves, garlic minced
1/2 cup chopped kimchi
To serve:
Cucumber
Hard boiled egg
Sesame oil
Sesame seeds
Instructions
Mix together the ingredients of the sauce. Taste and adjust seasoning to taste
Prepare your noodles. For the shiritaki noodles, we just drained and rinsed it. Microwave it in a bowl to heat up! You should follow the instructions provided for your specific brand/type of noodles for preparation.
Garnihs with sesame seeds, sliced cucumber and a hard boiled egg. You can drizzle some sesame oil for extra fragrance and taste!
